Ingredients
Instant Pot Method
Add all ingredients to Instant Pot
Cook for 18 minutes on high pressure
10 minutes natural cool down
Turn pot off
Allow to steam covered with a dish cloth for 10 min
Fluff with fork
Wipe a glass (pyrex) round bowl with a dash of olive oil
Pat the cooked rice down into the bowl firmly
Put in fridge until about 1 hour before serving
Put in microwave covered on high for 3-4 min
Unmold onto plate and sprinkle with green onions
Leftovers freeze well

1 can of light coconut milk + 2 cups vegetable stock
1-2 Tbs turmeric
Salt + pepper
