15-min Frozen Pea Soup

High-protein, super easy and fresh



Ingredients

  • 1 16 oz package petite frozen peas - sweeter and more tender than regular frozen peas

  • 1 onion, chopped

  • 4-5 garlic cloves, chopped or minced

  • 3 Tbs olive oil

  • 2 cups veg broth

  • 1/2 tsp turmeric powder

  • 1 tsp black pepper

  • 1 bunch of cilantro, chopped, optional


instructions

  • Saute onion and garlic over medium heat until they are soft and translucent 5-8 min

  • Add the frozen peas, black pepper, turmeric and veg broth and bring to a boil

  • Turn off the stove once it has started to boil

  • Once cooled add to a blender and blend till smooth

  • Stir in the cilantro, if using, and serve



notes

  • Serves 6

  • I added air fryer soy curls as crispy croutons (and extra protein) to the soup. Delicious!

  • This soup keeps well and tastes better the second day.

  • I didnt have cilantro and it tasted great without.
